and finest ingredients possible, to only use frozen if I cannot
find them;
The Strength to change the menu seasonally and forego the
classic menu items, to make the best food I can or not
cook at all;
The Wisdom to cost out everything, and not go over my
budget;
The Balance of a great kitchen and the staff to make it
