Born

In a small Midwestern town. In the year of the Pig.
To a very special young couple, overflowing with
the love of god in there hearts and a mind filled with dreams.
On November 2, 1971

Were blessed with a small baby boy at 10:20 AM

 
Location

In September of 2005 a small gust of wind and rain, Called
Hurricane Katrina caused a shift in my location...I moved
from New Orleans, LA to the safe heaven of Rehoboth Beach, DE
In Jan 2007 I moved to Seattle.

Home

In November of 19?? I moved to New Orleans.. This is where I grew
up.. From a child to a man. Seeing the world with new eyes.

School

I attended the New England Culinary Institute in Vermont.
I also studied 1 year in Tokyo, Japan

Mentors

I really have several.. I can remember watching cooking shows

with my mom in bed on Sunday mornings watching Justin Wilson,

Who is not Cajun or a chef, but he was fun to watch...

As Famous Chef's go, Chef Alice Waters, Chef Susan Spicer, Chef Susanna Foo are chef's I really look up to and admire.. Now as to people I have worked with over the years Chef Juan Felix Monrabal was one
I really connected with. His love of French food and his Cuban
background really made him a great teacher, and his curiosity
of Asian & Indian Cuisine made him a great student of mine.

Then I come to Chef Diana Alspaugh in Dayton, Ohio.
She was the first Chef I ever worked with. She was great from
growing herbs to throwing pottery. Giving me a great outlook
on becoming a Chef.

Culture

As far back as I can remember I was always looking beyond my
backyard. Overseas. Dreaming about other worlds. I was exposed
to many different cultures as a child trying everything at lease once.
